I love making this from a burrito mixture leftover. I make a big batch of burrito mix and freeze the leftover. Weeks later I pull out the burrito mix and make nachos.
**Warm burrito leftover in microwave
**Layer tortilla chips on a plate.
**Spoon burrito mixture on plate and top with cheese
**Microwave until cheese is all melted
**Add your toppings: sliced olives, shredded lettuce, sour cream...

On those days when I really don't have time or energy to cook and get one of those rotisserie chickens from the store, I'll whatever is left of the chicken the next day (usually like 1/2 - 3/4 of the bird) to make enchiladas or fajitas. I usually have lots of left over filling and I'll make extra enchiladas with 1/2 and then freeze the other half and we'll make nachos with it too :) Yay for Mexican food!
