Corn Tortilla Chips


To go with our hummus, I fried up some corn tortilla chips. You can bake them but today it was faster to just fry them up. Heat a good amount of oil in the pan till it covers the tortilla. Brown on both sides and drain on paper towels. Season with salt or leave plain.

Chicken Noodle Soup


I make my soup many different ways. Sometimes I use chicken thighs, chicken breast, just plain broth or even a carcass. Today I had a leftover carcass so here is a recipe made from a carcass.

*Heat your pan really hot with olive oil ( or whatever you cook with)

*Roughly shop onion (you can leave the skin on if you like) and drop in your hot pan

* Break your carcass up and drop in a pot with the onion

*Brown it real well until you get all that juice on the bottom of the pot that you can scrape

*Pour water while scraping the bottom of the pan.

*Bring to a boil and add roughly chopped carrots and celery

* Simmer for at least an hour. If you have time, simmer for 3 hours.

*Herbs can be added like thyme, rosemary, parsley, or even lemon


***After the broth is done, scoop all the veggies and carcass out of the pot. Peel the skin off of the carrots and cut them into bite size piece. Pull any leftover chicken off the bone and set aside.



I sometimes saute my vegetables but on a lazy day, I just throw everything in a pot


  1. Add 2 stalks of chopped celery. Simmer until a bit tender

  2. Add 1 tsp. of cumin, 1 tsp. paprika, salt and pepper

  3. Throw in a bag of small brussel sprouts and egg noodles

  4. After veggies are done, add your diced chicken and carrots

Peanut Butter Smoothie

1 Cup of cold milk
1 banana
2 Tbps of peanut butter
***Blend and Serve.
You can add flaxseed , wheat germ, chocolate syrup... to this.

Teriyaki Meatballs

I was browsing through Albertsons thinking like always, what's for dinner. I looked at the deli to get ideas and saw a sign and a plate that said Teriyaki Meatballs. I picked up a bottle of teriyaki sauce and could not wait to get home to google the recipe. I came across this
It was made with turkey but I used beef. I had no carrots or green onions as we have not done our major shopping yet. My kids loved it. Very kid friendly recipe. Other than not adding carrots and green onion I followed it exactly. I served a plate of steamed rice, layer of steamed or sauteed cabbage and topped it off with the meatballs.

Apple Toast

My version of Apple Toast: I sprinkled brown sugar on the butter, layed the thinly sliced apples on the toast, and sprinkled more brown sugar on the apples, topped off with cinnamon.

Shrimp Scampi

This Shrimp Scampi was so easy and delicious. The only changes I made was omited the wine and I added sliced avacado on top. You can add any vegetable to this dish. I love zucchini so I sauteed up some zucchini and cherry tomatoes to add in with this dish.

Stroganoff with Egg Noodles

If you really like stroganoff, this is a recipe to make. It was delicious. It is too much of a fattening dish for me so I make this only once in awhile. I did not change it one bit. I followed directions exactly.

Stove top Macaroni and Cheese

I have yet not found a yummy mac and cheese so I figured one out on my own. First many of the mac and cheese, calls for baking I really think it dries it out. So here is mine.

2 tlbs butter melted in pot

2 tbls four

1 cup half and half

salt and pepper

1 cup of cheddar cheese

5 or so oz of cooked macaroni and cheese ( we like the large shells)



***Melt butter in pot. Add flour and whisk until no lumps and starts to bubble.

**Remove from heat and slowly add 1 cup of half and half ( trust me it is sooo creamy)

**Return to heat and whisk. Boil one minute

**Remove fromheat and add cheddar cheese. Mix until cheese is all melted. Add cheese to warm noodles. Serve warm.

Chili

Sooo so good chili. My changes: I did not use beer. I did use coffee. I used extremely good coffee and that gave it a kick. For spices I used cumin, chili powder, brown sugar, tomato paste ( only 2 tbls). I would next time use beef broth. I did not have on hand. Very, very good. Oh and I did not have corriander but I added a handful of cilantro when I sauteed my garlic and added my spices.
We made cilantro cornbread on the side.

Hamburger Noodle Bake

Ohh this dish was sooo good. I used half of sour cream and half of cream cheese as well. I also used fresh baby spinach and layered in ontop of the cheese layer. Easy, fast and yummy. The kids clear the plate when I make this.

Japanese Chicken

This chicken was amazing good. I highly recommend do not use , again DO NOT use chicken breast. It was very dry. I used chicken thighs the first time, halved the recipe and it was delicious. Finger licking good. I served with white rice and steamed cabbage and shrimp and chicken wontons.

Creamy Burrito Casserole

I would add olives. I am making it again this week and will add black olives. I also added picante sauce with the ground beef and refried beans.

Crockpot Potato Chowder

I loved this recipe. It was comforting and filling and most important very easy. I made a few changes. I added way more water than they suggested. I filled the pot with potatoes and added water a few inched above the potatoes. Very delicious. I served with homemade parmesan breadsticks. ( which I was not so happy about but still good).
